Crisp dry-aged duck breast brushed with an electric Szechuan and hibiscus reduction, balanced by sweet smoked carrot velvet and a calculated, fiery ghost pepper emulsion.
To infuse the chili oil, gently heat the grapeseed oil and minced ghost pepper to 80°C (175°F) for 15 minutes. Strain through a fine-mesh sieve lined with coffee filter paper and chill completely.
Prepare the fiery emulsion by whisking the egg yolk and fresh lime juice together in a small bowl, then slowly drizzling in the chilled ghost pepper oil until a glossy, thick, mayonnaise-like emulsion forms. Season with a pinch of sea salt and reserve in a squeeze bottle at room temperature.
Make the carrot purée: Steam the sliced carrots with the star anise until completely tender. Discard the star anise, transfer the hot carrots to a high-speed blender, and purée with the browned butter until silky smooth. Pass through a tamis sieve and adjust seasoning.
Prepare the spicy glaze: In a small saucepan, combine black vinegar, hibiscus flowers, honey, and crushed Szechuan peppercorns. Simmer gently until reduced by half into a glossy lacquer. Strain through a chinois and keep warm.
Place the scored duck breasts skin-side down in a cold, heavy-bottomed stainless steel pan over medium-low heat. Slowly render the fat for 10-12 minutes, periodically draining rendered fat, until the skin is deep golden and crisp.
Flip the breasts to briefly sear the flesh side for 2 minutes, basting with a spoonful of the warm Szechuan-hibiscus lacquer until core temperature reads 54°C (130°F) for medium-rare. Rest on an elevated rack for 8 minutes.
Brush the rested duck breasts with an additional layer of the glaze, then slice each breast into elegant, uniform medallions and finish with fleur de sel.
To plate: Swipe a generous curve of warm smoked carrot purée across each plate, arrange duck medallions alongside, dot with high-contrast drops of the ghost pepper emulsion, and garnish with micro red shiso and nasturtium leaves.
