Cooking Instructions

    Coarsely crush toasted Szechuan peppercorns in a mortar and pestle. Mix with Guajillo powder, habanero flakes, and sea salt. Coat the venison loin evenly with the spice blend, pressing firmly so it adheres.

    Boil chopped parsnips in salted water until fork-tender (approx. 15 minutes). Drain, then transfer to a high-speed blender with heavy cream and 1 tbsp butter. Process until silkily smooth. Season with salt and keep warm.

    Heat grapeseed oil in a heavy cast-iron skillet over high heat until smoking point. Sear venison for 2-3 minutes per side to develop a deep, aromatic spice crust, maintaining a rare to medium-rare center (125Β°F internal temp). Add 1 tbsp butter and thyme sprigs in the last minute, basting constantly.

    Remove venison to a warm plate to rest for 8 minutes before slicing.

    In the same skillet over medium heat, saute minced shallots until translucent. Add fresh blackberries and fermented chili paste, gently mashing the berries to release their juices.
