2 skin-on duck breasts (approx. 200g each)
1 tbsp whole red Szechuan peppercorns
1 tsp whole green Szechuan peppercorns
1 whole star anise
1 tsp flaky sea salt
150 ml fresh blood orange juice
1/2 habanero pepper, seeded and finely minced
1 tbsp Calabrian chili paste
2 tbsp wildflower honey
30 ml aged sherry vinegar
300 g parsnips, peeled and diced
60 ml heavy cream
40 g chilled unsalted butter, cubed
5 g micro red sorrel or fresh chervil for garnish

Cooking Instructions

    Toast red Szechuan peppercorns, green Szechuan peppercorns, and star anise in a dry skillet over medium heat for 2 minutes until fragrant. Grind coarsely in a spice grinder with flaky sea salt.

    Score the duck breast skin in a tight 2mm diamond crosshatch pattern without piercing the meat. Generously rub the toasted spice mixture into both sides of the duck.

    For the parsnip silk: Simmer diced parsnips in lightly salted water for 15 minutes until tender. Drain and blend in a high-speed blender with heavy cream and 20g butter until perfectly smooth. Pass through a fine chinois mesh sieve and keep warm.

    For the gastrique: Combine blood orange juice, minced habanero, Calabrian chili paste, honey, and sherry vinegar in a saucepan. Simmer over medium heat for 8-10 minutes until reduced to a glossy, coat-the-back-of-a-spoon syrup. Whisk in the remaining 20g cold butter off the heat.

    Place duck breasts skin-side down in a cold, heavy skillet over low heat. Render fat slowly for 10-12 minutes until the skin is deep golden brown and ultra-crispy, spooning excess fat out continuously.

    Flip duck breasts and cook for 2-3 minutes until internal temperature reaches 54°C (130°F) for medium-rare. Transfer to a warm cutting board and rest for 5 minutes.

    To serve: Swoosh warm parsnip silk across heated porcelain plates. Slice duck breast against the grain into 5mm thick ribbons and fan over the puree. Laddle the vibrant chili-blood orange gastrique around the plate and garnish with fresh micro herbs.
