Beer Steamed Mussels

Prismatic wild Icelandic halibut gently poached to silky perfection, presented in an intensely aromatic, nutrient-dense tomato-kombu consommé with charred sea beans, beech mushrooms, and finger lime pearls.
Pulse heirloom tomatoes in a blender with ginger, lemongrass, and a pinch of salt until coarsely crushed. Pour into a fine-mesh chinois lined with triple-layered damp cheesecloth suspended over a bowl. Refrigerate for 2 hours to yield a crystal-clear tomato water.
Transfer 500ml of clarified tomato water to a saucepan, add kombu, and warm over low heat to 60°C (140°F). Steep for 20 minutes to extract umami without bitterness, then discard kombu. Keep broth warm at 65°C.
Lightly season halibut portions with a delicate dusting of fine sea salt and temper at room temperature for 10 minutes to allow mild osmotic firming.
Lightly char the baby leeks on a searing-hot cast-iron plancha without added oil until blistered, then steam shimeji mushrooms for 90 seconds until tender.
Steam the halibut gently in a bamboo or combi-steam oven at 82°C (180°F) until the core temperature reaches precisely 48°C (118°F), approximately 7 to 8 minutes, yielding an opaque, tender flake.
To plate, set a tender halibut fillet in the center of four warm shallow ceramic bowls. Artfully arrange charred baby leeks, shimeji clusters, and blanched sea beans around the fish.
Crown the halibut with finger lime pearls. Tableside, ladle 100ml of warm tomato-kombu broth into the base of each bowl, finishing with drops of emerald chive oil that split like jewels across the surface.
