Ingredients

•2 firm Bosc pears, peeled, cored, and halved
•0.25 g premium saffron threads
•200 g caster sugar, divided
•1 whole star anise
•250 ml heavy whipping cream (36% fat)
•100 ml whole milk
•1 whole Madagascar vanilla bean, split and scraped
•15 g culinary applewood smoking chips (for smoking cream)
•4 large egg yolks
•120 g Valrhona Ivoire 35% white chocolate, finely chopped
•1.5 sheets silver gelatin (bloomed in ice water)
•150 ml 100% bergamot fruit puree
•1.8 g agar-agar powder
•30 g dark buckwheat flour
•30 g unsalted butter, melted
•30 g egg whites (approx. 1 egg white)
•30 g sifted confectioner's sugar
•12 micro red shiso leaves for garnish

Cooking Instructions

  1. 01

Cold-smoke the heavy cream: Place the cream in a wide, shallow glass dish inside a smoking chamber or covered bowl. Ignite applewood chips using a handheld smoking gun and introduce dense smoke under plastic wrap for 12 minutes. Stir and repeat once to impart a delicate smoked aroma.

  2. 02

Prepare the smoked vanilla crémeux: In a saucepan, combine the smoked cream, milk, vanilla seeds, and pod. Bring to 80°C. Whisk egg yolks with 40 g of caster sugar until pale. Temper hot liquid into yolks, return to gentle heat, and stir continuously until the anglaise reaches 82°C. Remove from heat, dissolve the bloomed gelatin, and strain over the chopped white chocolate. Emulsify with an immersion blender without incorporating air bubbles. Transfer into quenelle silicone molds and chill for at least 4 hours until set.

  3. 03

Poach the pears: In a medium saucepan, combine 500 ml water, 120 g caster sugar, saffron threads, and star anise. Bring to a simmer until saffron infuses to a vibrant golden hue. Submerge pear halves, cover with a parchment cartouche, and gently poach at 85°C for 18-20 minutes until tender but retaining structural integrity. Allow to cool fully in poaching liquor, then cut each half into paper-thin pressed ribbons or neat geometric wedges.

  4. 04

Craft the bergamot fluid gel: Whisk bergamot puree, 40 g caster sugar, and agar-agar in a saucepan. Bring to a rolling boil for 60 seconds while whisking constantly. Pour into a shallow tray and refrigerate until fully set into a brittle gel (about 45 minutes). Transfer set gel to a high-speed blender and blend on high until completely glossy and smooth. Pass through a fine chinois into a squeeze bottle.

  5. 05

Bake the buckwheat tuiles: Preheat oven to 165°C (convection). Whisk buckwheat flour, confectioner's sugar, melted butter, and egg white together until a smooth paste forms. Spread thinly across a patterned silicone tuile mat. Bake for 6-8 minutes until crisp and golden brown. Gently shape over a rolling pin while warm to form curved crisps; let cool.

  6. 06

Assembly: Unmold the smoked vanilla crémeux onto chilled, shallow presentation plates. Neatly arrange the saffron pear ribbons alongside. Pipe dots of vibrant bergamot fluid gel around the base. Crown each crémeux with a curved buckwheat tuile, and garnish with micro red shiso leaves.

The Caprese Salad Skewers recipe was a triumph! I prepared them for a party's barbecue and everyone loved them. The basil was so aromatic, the mozzarella so fresh, and the skewers were the perfect size and an appropriate.
