Smoked Paprika and Chickpea Soup

An elegant, silky panna cotta infused with subtle floral notes of culinary lavender, paired with the deep resonance of smoked honey and a sharp blackberry-thyme reduction.
Soak the gelatin sheets in a bowl of ice-cold water for 5-10 minutes until softened.
In a small saucepan, combine the heavy cream, smoked honey, and dried lavender. Heat gently over medium-low heat until it reaches a simmer, then remove from heat immediately. Do not boil.
Squeeze the excess water from the softened gelatin and whisk it into the warm cream mixture until completely dissolved. Let the mixture steep for 5 minutes.
Strain the mixture through a fine-mesh sieve (chinois) into a jug to remove lavender buds. Pour the liquid into four chilled ramekins or silicone molds. Refrigerate for at least 6 hours, preferably overnight.
To make the reduction, combine blackberries, sugar, thyme, and lemon juice in a small saucepan. Simmer over medium heat for 10 minutes until the berries break down and the liquid thickens into a syrup.
Strain the blackberry reduction through a sieve to remove seeds and thyme. Let it cool completely.
To serve, briefly dip the bottom of the molds in warm water to release. Invert onto chilled plates. Drizzle with the blackberry-thyme reduction and garnish with crushed pistachios and a tiny drop of additional smoked honey.
