Smoked Paprika and Chickpea Soup

A sophisticated French-inspired tart featuring a thyme-infused almond frangipane, fresh black mission figs glazed with smoked honey, and a velvet lavender-infused whipped mascarpone.
Pulse flour, 100g butter, and 40g sugar in a food processor until it resembles breadcrumbs. Add one egg yolk and pulse until dough forms. Chill for 30 minutes.
Preheat oven to 180Β°C (350Β°F). Roll out pastry and line a 9-inch tart tin. Blind bake with weights for 12 minutes, remove weights, and bake for 5 more minutes.
Cream remaining butter and sugar. Fold in almond flour, chopped thyme, and the second egg yolk to create the frangipane.
Spread frangipane evenly over the par-baked tart shell. Arrange fig halves cut-side up on top.
Bake for 20-25 minutes until the frangipane is golden and set. Remove and immediately brush figs with half of the smoked honey.
Infuse heavy cream with lavender buds over low heat for 5 minutes (do not boil). Strain and chill completely.
Whisk cold lavender cream and mascarpone together until stiff peaks form. To serve, dollop cream on the side, drizzle remaining smoked honey, and finish with a pinch of sea salt.
