Season with salt to taste, pass through a fine chinois, and keep warm.

For the Spice Crust: In a dry skillet over medium heat, toast the Sichuan and black peppercorns until highly fragrant, about 2 minutes. Transfer to a mortar and pestle and grind to a coarse powder. Mix in the flaky sea salt.

For the Duck: Score the duck breast skin in a tight crosshatch pattern, taking care not to cut into the meat. Press the spice-and-salt mixture firmly onto the skin side of the duck breasts.

Slowly render the fat for 8-10 minutes until the skin becomes extremely thin, crispy, and deeply golden. Flip the breasts and cook for an additional 2-3 minutes for medium-rare (internal temperature of 54°C/130°F). Remove from the pan and let rest on a warm board for 8 minutes.

For the Spicy Blackberry Reduction: Pour off excess duck fat from the pan, leaving about 1 tablespoon. Add the fresh blackberries, fermented chili paste, duck stock, balsamic vinegar, honey, and star anise to the pan. Simmer over medium-high heat, crushing the blackberries with a spoon, until the mixture reduces to a glossy, syrupy glaze (about 6-8 minutes). Strain through a fine-mesh sieve, discarding the solids.

To Plate: Spoon a generous pool of the warm vanilla-parsnip purée onto the center of each plate. Slice the rested duck breasts at an angle and fan them over the purée. Drizzle the vibrant, spicy blackberry reduction elegantly around the plate. Garnish with micro-shiso and serve immediately.
