Place the duck breasts skin-side down in a cold, dry cast-iron skillet. Place the skillet over medium-low heat. This slow process renders the fat and results in incredibly crispy skin. Cook undisturbed for 8-10 minutes, spooning out excess fat as it accumulates, until the skin is deeply golden and shatteringly crisp.
