6 large U10 dry-packed sea scallops, tough side muscle removed
50g spreadable Nduja spicy pork sausage
1 tbsp fermented Calabrian chili paste
80ml grapeseed oil, divided
1 tsp whole Sichuan peppercorns
1/2 cup fresh cilantro leaves, packed
1/4 cup fresh mint leaves
1 medium shallot, finely minced
1 garlic clove, finely grated
60ml dry white wine (e.g., Sauvignon Blanc)
80ml heavy cream
30g unsalted cold butter, cubed
1 finger lime, pearls extracted (for garnish)
Fleur de sel and microgreens for final plating

Cooking Instructions

    To make the Sichuan Herb Oil: Toast Sichuan peppercorns in a dry pan until fragrant (1-2 minutes). Coarsely crush them. Heat 60ml of grapeseed oil to 80°C (175°F), add the toasted peppercorns, and let infuse off the heat for 10 minutes. Transfer to a high-powered blender with the cilantro and mint. Blend on high until bright green and smooth. Strain through a coffee filter or fine-mesh sieve lined with cheesecloth. Set aside.

    To make the Chili-Nduja Emulsion: Melt 10g of butter in a small saucepan over medium heat. Sauté the minced shallots and garlic until translucent and fragrant (about 2 minutes). Add the Nduja paste and Calabrian chili paste, stirring and mashing to render the fat and release the aromatics (2 minutes).

    Pour in the white wine to deglaze, scraping up any browned bits. Reduce the wine by half. Pour in the heavy cream and bring to a gentle simmer. Cook for 3 minutes until slightly thickened. Transfer the mixture to a blender and process until completely smooth. While blending, slowly add the remaining 20g of cold cubed butter to create a glossy, stable emulsion. Strain through a fine chinois, season to taste with salt, and keep warm.

    Prep the scallops: Pat the scallops thoroughly dry with paper towels. Season both flat sides generously with sea salt just before cooking.

    Sear the scallops: Heat a heavy cast-iron skillet over high heat. Add the remaining 20ml of grapeseed oil. Once the oil begins to smoke slightly, carefully add the scallops. Sear undisturbed for 2 minutes to develop a deep, golden-brown crust. Flip the scallops and sear the other side for exactly 45 seconds to 1 minute, keeping the center medium-rare. Immediately transfer to a warm plate lined with paper towels to drain.

    Assemble the plate: Spoon a generous pool of the warm Chili-Nduja Emulsion in the center of two heated shallow bowls. Arrange three seared scallops on top of the sauce. Artfully drizzle the vibrant green Sichuan Herb Oil around and into the emulsion. Garnish the scallops with finger lime pearls for bursts of acidity, microgreens, and a delicate sprinkle of Fleur de sel. Serve immediately.
