2 fresh Branzino fillets, skin-on and scaled (approx. 150g each)
2 large fennel bulbs, thinly sliced (reserve fronds for garnish)
100ml high-quality heavy cream
1 generous pinch of premium Persian saffron threads
1 preserved lemon, rind only, finely minced
1/2 bunch fresh flat-leaf parsley, leaves only, finely chopped
30g pine nuts, toasted and roughly chopped
60ml cold-pressed extra virgin olive oil
20g unsalted cultured butter
Maldon sea salt to taste
Freshly ground white pepper to taste

Cooking Instructions

    In a small saucepan, bring the heavy cream and saffron threads to a gentle simmer. Remove from heat and allow to infuse for at least 15 minutes.

    Sauté the sliced fennel in butter over medium heat until translucent and soft, but not browned. Add the saffron cream and simmer for 5 minutes until the fennel is completely tender.

    Transfer the fennel mixture to a high-speed blender. Process until completely smooth. Pass through a fine-mesh chinois for a professional, silky texture. Season with salt and white pepper; keep warm.

    Prepare the gremolata by combining the minced preserved lemon rind, chopped parsley, toasted pine nuts, and 30ml of olive oil in a small bowl. Set aside.

    Pat the branzino fillets bone-dry with paper towels. Lightly score the skin with a sharp knife and season only the skin side with sea salt.

    Heat the remaining olive oil in a stainless steel skillet over medium-high heat. Place the fillets skin-side down, pressing firmly with a weight or spatula for 30 seconds to ensure even contact. Cook until the skin is golden and glass-crisp, about 4 minutes.

    Gently flip the fish and cook for a final 30-45 seconds. Remove from the pan immediately.

    To plate, spoon a generous pool of the fennel velouté onto the center of a warmed plate. Place the branzino fillet on top, skin-side up. Top the fish with the preserved lemon gremolata and garnish with fresh fennel fronds.
