β€’4 tbsp high-quality Tuscan extra virgin olive oil, divided
β€’1 cup wild fennel fronds and tender stalks, chopped
β€’1.5 cups multicolored heirloom cherry tomatoes, halved
β€’0.5 cup Vermentino or Pinot Grigio
β€’1 generous pinch of high-quality saffron threads
β€’2 garlic cloves, paper-thinly shaved
β€’0.5 tsp fermented Calabrian chili paste
β€’0.5 cup fresh sea beans (salicornia), rinsed
β€’Fleur de sel to taste
β€’1 tsp fresh Amalfi lemon juice
β€’0.5 cup homemade light fish stock

Cooking Instructions

    To make the fennel oil, blanch the wild fennel fronds in a pot of boiling salted water for 30 seconds, then immediately shock them in ice water. Drain thoroughly, squeeze out all excess moisture with a clean kitchen towel, and blend on high speed with 3 tablespoons of extra virgin olive oil until vibrant green. Strain through a fine-mesh sieve lined with a coffee filter; set aside.

    Pat the black cod fillets completely dry with paper towels. Season the flesh side lightly with fleur de sel. Allow the fish to temper at room temperature for 10 minutes before cooking.

    To prepare the Acqua Pazza, heat 1 tablespoon of olive oil in a medium saucepan over medium-low heat. Add the shaved garlic and Calabrian chili paste, sweating gently for 1 minute without letting the garlic color.

    Add the halved cherry tomatoes and a pinch of salt to the pan. Cook until they begin to collapse and release their natural juices, about 3 minutes.

    Pour in the white wine and simmer until reduced by half. Add the fish stock and saffron threads. Reduce heat to low and let simmer gently for 8 minutes to infuse the saffron and fuse the flavors. Keep warm.

    Heat a heavy-bottomed cast-iron skillet over medium-high heat with the remaining 1 tablespoon of olive oil. Place the cod fillets skin-side down, pressing gently with a fish spatula for 30 seconds to ensure even skin contact. Cook undisturbed for 4-5 minutes until the skin is exceptionally crispy and golden. Gently flip and cook for 1 additional minute. Transfer to a warm plate to rest.

    Drop the sea beans into the simmering saffron-tomato broth for exactly 45 seconds to lightly blanch them while retaining their signature snap. Remove from heat and stir in the fresh lemon juice.

    To plate, ladle the vibrant saffron-tomato broth into two shallow artisan bowls. Arrange the sea beans and tomatoes in the center of each bowl. Carefully place the pan-seared black cod, skin-side up, on top of the vegetables. Drizzle the green fennel oil in droplets around the fish into the broth to create a striking split-sauce aesthetic. Garnish with a few fresh micro-fennel fronds and serve immediately.
