A sophisticated modern dessert balancing caramelized Valrhona white chocolate and cold-smoked Tahitian vanilla against the bright acidity of bergamot fluid gel and airy pistachio sponge.
Preheat an oven to 120°C (250°F). Spread white chocolate evenly on a silicone baking mat and roast for 35–40 minutes, stirring every 10 minutes, until deep caramel in color and fragrant.
Heat heavy cream with scraped smoked vanilla seeds and pod to 80°C (176°F); remove from heat and steep covered for 15 minutes. Strain cream over the warm roasted white chocolate, season with a pinch of sea salt, and emulsify with an immersion blender until ultra-glossy. Transfer to a piping bag and chill for 2 hours to set.
Combine bergamot purée, 30g sugar, and agar-agar in a small saucepan. Bring to a rolling boil for 60 seconds while whisking continuously. Pour onto a shallow tray and refrigerate until completely gelled (approx. 30 minutes).
Transfer the firm bergamot gel to a high-speed blender and process on high until silky, glossy, and fluid. Strain through a fine chinois into a squeeze bottle.
In a blender, combine pistachio paste, egg whites, egg yolks, flour, and remaining 40g sugar. Blend until homogeneous, strain into a 0.5L whipping siphon, and charge with two N2O chargers. Shake vigorously.
Make three small vertical cuts in the base of four paper cups. Dispense the siphon batter halfway up each cup and microwave individually on high power for 40 seconds. Invert immediately on a wire rack to cool, then tear into organic, bite-sized pieces.
To plate: Pipe elegant teardrops of roasted chocolate ganache across chilled matte plates. Artfully nestle torn pieces of pistachio sponge around the ganache. Dot precisely with bergamot fluid gel, finish with Maldon salt crystals on the ganache, and garnish with micro purple shiso leaves.
