Caramelize the white chocolate: Preheat convection oven to 120°C (250°F). Spread chopped white chocolate evenly on a silicone baking mat. Roast for 35–40 minutes, stirring thoroughly every 10 minutes with an offset spatula, until it turns a deep amber-caramel hue. Reserve warm.

Prepare the buckwheat sablé: In a stand mixer fitted with the paddle attachment, cream pliable brown butter, powdered sugar, and a pinch of salt until smooth. Incorporate buckwheat flour and all-purpose flour until dough just comes together. Roll between two sheets of parchment to 2mm thickness and freeze for 20 minutes. Stamp out 7cm discs and bake at 165°C (330°F) for 10–12 minutes until aromatic and crisp. Cool completely on a rack.

Create the roasted chocolate crémeux: Bring milk and 150ml of cream to a gentle simmer in a saucier. Whisk egg yolks lightly in a bowl, then slowly temper with warm dairy. Return mixture to low heat, stirring constantly until it coats the back of a spoon at 82°C (180°F). Stir in bloomed gelatin sheets until dissolved. Emulsify the custard into the roasted white chocolate using an immersion blender until a glossy emulsion forms. Pour into circular silicone molds and chill for at least 4 hours until set.

Poach and compress the pear ribbons: In a small saucepan, gently dissolve 15g shiro miso in mirin, yuzu juice, 100ml water, and 20g sugar over low heat; strain through a fine-mesh chinois and cool. Submerge thin pear ribbons into the liquid and transfer to a vacuum chamber seal bag. Vacuum-seal at 99% compression (or steep gently at 65°C for 8 minutes) until pear slices turn translucent and tender-crisp.

Make the miso caramel emulsion: Dry-caramelize the remaining 30g granulated sugar in a heavy saucepan until deep golden amber. Carefully deglaze with the remaining 150ml warmed heavy cream. Whisk in the remaining 20g shiro miso. Simmer for 2 minutes, then strain through a fine sieve and transfer into a squeeze bottle; cool to room temperature.

Plate the dessert: Anchor a crisp buckwheat sablé disc in the center of a chilled slate or porcelain plate. Unmold and place the roasted white chocolate crémeux squarely atop the sablé. Artfully drape folded, translucent miso-pear ribbons across the crémeux. Pipe discrete droplets of the miso caramel surrounding the base. Crown with micro red shiso leaves and a few crystals of flaky Maldon salt.
