An exquisite modern French haute-cuisine creation featuring line-caught turbot basted in cultured butter, paired with a delicate Champagne-oyster emulsion, caramelized baby leeks, and a luxurious crown of Oscietra caviar.
Prepare the fondant baby leeks: Blanch the leeks in salted boiling water for 90 seconds, then shock immediately in ice water. Drain thoroughly. In a sauté pan, gently braise them over low heat with 30g of cultured butter, a splash of fish fumet, and a pinch of fleur de sel until meltingly tender and glazed. Keep warm.
Reduce the emulsion base: In a heavy copper saucepan, sweat the finely minced shallots in 10g of butter over gentle heat until translucent without browning. Add the Champagne and reserved oyster liquor. Reduce by two-thirds until syrupy.
Craft the Champagne-oyster emulsion: Pour in the fish fumet and reduce by half. Whisk in the crème fraîche and simmer gently for 2 minutes. Lower heat to very low, add the raw shucked oysters to poach for barely 45 seconds, then transfer the entire mixture into a high-speed blender. Emulsify while gradually incorporating 60g of ice-cold cubed butter until silky and aerated. Strain through a fine chinois (conical strainer) and adjust seasoning with white pepper. Reserve warm at approximately 55°C.
Pan-roast the turbot: Score the turbot skin lightly in a diamond pattern and pat completely dry. Season flesh lightly with fleur de sel. Heat grapeseed oil in a stainless-steel skillet over medium-high heat. Place fish skin-side down, gently pressing for the first 30 seconds to ensure even contact. Sear until the skin turns crisp and golden (about 3-4 minutes).
Baste the fish: Flip the fillets gently and immediately add the remaining 50g of butter to the pan. Allow the butter to foam (beurre moussant) and continuously baste the fillets (arrosé) for 2 minutes until the core reaches 48°C and the flesh turns iridescent and pearly. Transfer to a warm rest plate for 2 minutes.
Plating: Re-froth the Champagne-oyster velouté using an immersion blender held at an angle to produce a light, delicate foam. Arrange two glazed fondant leeks in parallel at the center of warmed shallow porcelain bowls. Gently perch the roasted turbot fillet over the leeks, crisp skin facing up. Spoon the frothy emulsion generously around the perimeter. Top each fillet with an elegant quenelle of Oscietra caviar, and finish with delicate bronze fennel sprigs.

The Caprese Salad Skewers recipe was a triumph! I prepared them for a party's barbecue and everyone loved them. The basil was so aromatic, the mozzarella so fresh, and the skewers were the perfect size and an appropriate.
