An evocative, multi-textured autumn dessert balancing caramelized figs, nutty brown butter financier, velvety aerated goat's milk curd, and an herbaceous bay leaf reduction.
Ingredients
Cooking Instructions
- 01
Prepare the brown butter frangipane bases: Melt cultured butter in a copper saucepan over medium heat until hazelnut brown and aromatic; strain and cool to room temperature. Whisk egg whites with confectioners' sugar and almond flour until smooth, then emulsify with the browned butter. Pipe into four 6cm flexipan rings and bake at 180°C (355°F) for 14 minutes until golden and springy.
- 02
Create the whipped goat milk espume: Bring goat milk, cream, and a pinch of fleur de sel to a simmer (80°C). Melt in the bloomed gelatin sheets. Cool to 35°C, strain through a chinois into an iSi siphon, charge with one N2O cartridge, and chill in an ice bath for at least 30 minutes.
- 03
Make the bay leaf gastrique: Simmer aged balsamic vinegar, wildflower honey, and bruised bay leaves together over low heat until reduced to a glossy, coating syrup (approx. 6–8 minutes). Discard the bay leaves and set reduction aside at room temperature.
- 04
Caramelize the figs: Brush halved figs lightly with honey and sear cut-side down in a dry smoking-hot cast-iron pan for 60 seconds until deeply caramelized, keeping the skin side fresh and firm.
- 05
Assemble and present: Place a warm frangipane round in the center of a shallow ceramic bowl. Arrange roasted figs adjacent to the cake. Dispense a delicate cloud of whipped goat milk espume beside the figs, streak the plate with the bay leaf gastrique, and garnish with micro-planed bay leaf and a delicate touch of fleur de sel.
Cooking Reviews

The Caprese Salad Skewers recipe was a triumph! I prepared them for a party's barbecue and everyone loved them. The basil was so aromatic, the mozzarella so fresh, and the skewers were the perfect size and an appropriate.
