An ethereal, nutrient-dense composition of pristine wild halibut gently poached at low temperature, served in a clarified charred leek and kombu consommé, finished with crisp coastal succulents and effervescent finger lime pearls.
In a heavy dry cast-iron pan over high heat, char the split leeks cut-side down until blackened and deeply caramelized, about 4 minutes. Remove and set aside.
Combine filtered spring water, charred leeks, kombu, dried shiitakes, and sliced ginger in a saucepot. Bring slowly to 65°C (150°F) over medium-low heat. Hold at this temperature for 30 minutes to extract delicate umami without bitterness, then strain through a fine chinois lined with cheesecloth. Season the clear broth lightly with sea salt.
Season the halibut fillets lightly with sea salt. Pour half of the strained aromatic broth into a wide, shallow poaching pan and bring to a precise 54°C (130°F). Submerge the fish fillets, cover tightly, and gently poach for 10–12 minutes until the fish turns opaque and yields tenderly to light pressure (internal temperature 50°C/122°F).
Warm the remaining half of the clear broth separately to 75°C (167°F).
To assemble, center each poached halibut fillet in a shallow, warm ceramic bowl. Artfully drape compressed cucumber ribbons and blanched sea beans over and around the fish.
Scatter finger lime pearls across the surface of each fillet. Tableside or before serving, pour the hot, fragrant charred allium broth into the base of each bowl. Finish with a few droplets of cold-pressed extra virgin olive oil across the broth.

The Caprese Salad Skewers recipe was a triumph! I prepared them for a party's barbecue and everyone loved them. The basil was so aromatic, the mozzarella so fresh, and the skewers were the perfect size and an appropriate.
