An exquisite Mediterranean signature dish balancing crisp-skinned sea bass with a smoky eggplant velvet, a saffron-infused mussel broth, and bright coastal aromatics.

Ingredients

4 wild sea bass fillets (170g each), skin-on and pin-boned
2 medium globe eggplants
30g toasted pine nuts
300g fresh mussels, cleaned and de-bearded
0.5g high-grade Spanish saffron threads
120ml dry Mediterranean white wine (e.g., Vermentino)
2 medium shallots, finely diced
3 garlic cloves, finely grated
80ml cold-pressed extra virgin olive oil, divided
45g cold unsalted butter, cubed
8 caperberries, sliced lengthwise
15g preserved lemon rind, fine julienne
30g fresh sea samphire (or micro sea greens)
Flaky sea salt and freshly cracked white pepper to taste

Cooking Instructions

    Char the whole eggplants directly over an open gas flame or under a blisteringly hot broiler, turning frequently for 15-20 minutes until completely blackened and soft. Transfer to a bowl, cover with film for 10 minutes to steam, then scoop out the soft flesh, discarding excess liquid and charred skin.

    In a high-speed blender, combine the eggplant flesh, toasted pine nuts, 1 grated garlic clove, and 30ml of extra virgin olive oil. Process on high until silky smooth. Season with flaky sea salt and white pepper, then pass through a fine tamis sieve. Keep warm.

    For the saffron brodo, heat 15ml olive oil in a deep saucepan over medium heat. Add diced shallots and remaining garlic; sweat until translucent. Increase heat to high, add fresh mussels and white wine, then cover immediately. Steam for 3-4 minutes until all mussels open.

    Strain the mussel cooking liquor through a fine chinois lined with muslin cloth into a small saucepan (reserve mussels for another use or discard). Add saffron threads to the warm liquid and steep off heat for 10 minutes to infuse depth and color.

    Score the skin of each sea bass fillet with 3 shallow diagonal cuts. Pat skin thoroughly dry with paper towels and season both sides lightly with salt.

    Heat 20ml olive oil in a heavy-bottomed stainless steel pan over high heat until shimmering. Place fillets skin-side down, gently pressing each with a fish spatula for 30 seconds to prevent curling. Reduce heat to medium-high and cook undisturbed for 4 minutes until skin is golden and ultra-crisp.

    Flip the fish, add 15g of cold butter to the pan, baste the flesh for 40 seconds, and immediately remove from heat. The internal temperature should reach 52°C (125°F).

    Bring the saffron brodo to a gentle simmer and vigorously mount with the remaining 30g cold cubed butter using an immersion blender until lightly aerated and glossy.

    To plate: Spoon a smooth dollop of charred eggplant silk into the center of warm shallow bowls. Gently rest the sea bass fillet skin-side up on the eggplant. Ladle the frothy saffron brodo around the base. Elegantly arrange sliced caperberries, julienned preserved lemon, and fresh samphire over and around the fish.
