Ingredients

4 skin-on wild sea bass fillets (approx. 160g each), scaled and pin-boned
4 globe artichoke hearts, cleaned and halved
1/2 tsp high-grade Greek or Spanish saffron threads
120 ml freshly squeezed blood orange or Valencia orange juice
80 ml crisp dry white wine (e.g., Assyrtiko or Vermentino)
100g cold unsalted high-fat European butter, diced
60 ml cold-pressed extra virgin olive oil
40g raw Mediterranean pine nuts
1 tsp wild ground sumac
3 cloves garlic, thinly sliced
1 large French shallot, finely minced
15g fresh flat-leaf parsley and mint, finely chiffonaded
Maldon sea salt and crushed Aleppo pepper to taste

Cooking Instructions

  1. 01

To make the charred artichoke purée, heat 20ml olive oil in a pan over high heat. Add the artichoke hearts cut-side down and sear until deeply caramelized and slightly charred (4-5 minutes). Add half the garlic and shallots; cook until soft. Transfer to a high-powered blender with 20g cold butter and splash of warm water, blending until silk-smooth. Pass through a fine chinois and season with salt.

  2. 02

Prepare the saffron-orange emulsion by combining the dry white wine, orange juice, saffron threads, and remaining minced shallot in a small saucepan over medium heat. Reduce until reduced to about 2 tablespoons of liquid.

  3. 03

Reduce heat to ultra-low and gradually whisk in 60g of cold diced butter piece by piece to form a rich, glossy emulsion. Season with a pinch of salt, cover, and keep warm off the heat.

  4. 04

Toast the pine nuts in a dry skillet over medium heat until golden brown. Toss immediately with ground sumac, chopped mint, parsley, remaining garlic, a drizzle of olive oil, and flaky sea salt to make the crunch gremolata.

  5. 05

Score the skin of the sea bass fillets lightly in a crosshatch pattern. Pat completely dry with paper towels and season with sea salt and Aleppo pepper.

  6. 06

Heat remaining olive oil in a heavy stainless steel or cast-iron skillet over high heat until shimmering. Lay fillets skin-side down, pressing gently with a fish spatula for 10 seconds to ensure full skin contact. Cook on the skin side for 3-4 minutes until golden and glass-like.

  7. 07

Add remaining 20g butter to the pan, flip the fish gently, and baste for 1 minute until tender and translucent in the center.

  8. 08

To plate: Swipe a generous curve of warm charred artichoke purée on each plate. Place a sea bass fillet skin-side up over the purée. Spoon the saffron-orange emulsion around the base, and top the fish with the sumac-pine nut gremolata.

Review

The Caprese Salad Skewers recipe was a triumph! I prepared them for a party's barbecue and everyone loved them. The basil was so aromatic, the mozzarella so fresh, and the skewers were the perfect size and an appropriate.
