β€’1 garlic clove, finely grated
β€’1 generous pinch of high-quality saffron threads
β€’0.5 cup dry white wine (such as Vermentino)
β€’1 cup high-quality fish stock or fumet
β€’3 tbsp unsalted butter, cold and cubed
β€’0.25 cup chickpea flour
β€’4 tbsp extra virgin olive oil, divided
β€’0.5 cup mixed fresh dill and chervil leaves
β€’1 tsp fleur de sel

Cooking Instructions

    Prepare the herb oil: Blanch the dill and chervil in boiling salted water for 10 seconds, then immediately plunge into ice water. Drain, squeeze out all excess moisture, and blend with 3 tablespoons of olive oil until smooth and vibrant green. Strain through a fine-mesh coffee filter and set aside.

    Create the Socca tuile: Whisk the chickpea flour with 0.25 cup of warm water, 1 teaspoon of olive oil, and a pinch of salt until a thin batter forms. Pour small dollops into a dry, non-stick pan over medium heat. Cook until lacy, crispy, and golden brown. Gently remove and drain on paper towels.

    Build the emulsion base: In a saucepan, sweat the sliced fennel, minced shallot, and grated garlic in 1 tablespoon of olive oil over low heat until translucent but not colored. Add the saffron threads and pour in the white wine, simmering until the liquid reduces by half.

    Simmer and blend: Add the fish stock to the fennel base and simmer gently for 15 minutes. Transfer to a high-speed blender and puree until completely smooth. Strain through a fine chinois back into a clean saucepan. Over low heat, vigorously whisk in the cold, cubed butter one piece at a time to emulsify. Season with salt to taste and keep warm.

    Sear the fish: Score the skin of the branzino fillets lightly and pat completely dry. Season both sides with fleur de sel. Heat 1 tablespoon of olive oil in a heavy-bottomed or stainless steel pan over medium-high heat. Place the fillets skin-side down, pressing gently with a spatula for 30 seconds to ensure even contact. Cook for 3-4 minutes until the skin is shatteringly crisp. Gently flip the fish and sear the flesh side for just 30 seconds. Remove from heat.

    Assemble and serve: Pour a pool of the warm saffron-fennel emulsion into the center of two shallow, warmed bowls. Position the branzino fillet, skin-side up, in the center of the emulsion. Top with the crispy chickpea tuile. Drizzle the green herb oil artistically around the plate and garnish with reserved fennel fronds.
