Melt 20g of butter in a saucepan over medium heat. Add sliced fennel with a pinch of salt and sweat until soft and translucent without browning, about 10 minutes.

Pour the saffron cream over the tender fennel, simmer for 3 minutes, then transfer to a high-speed blender. Purée until completely smooth, blend in 15g cold butter, and pass through a fine-mesh chinois. Keep warm.

Prepare Chermoula: Blend coriander, parsley, garlic, preserved lemon rind, cumin, smoked paprika, lemon juice, and 90ml olive oil until a rustic green sauce forms. Season with salt to taste.

Score the skin of the seabass fillets lightly in a crosshatch pattern. Pat thoroughly dry with paper towels and season both sides with salt and white pepper.

Heat remaining olive oil in a heavy stainless steel skillet over medium-high heat until shimmering. Place fillets skin-side down, pressing gently with a spatula for 10 seconds to ensure flat contact.

Sear skin-side down for 3-4 minutes until golden-crisp. Add remaining butter to the pan, flip fillets gently, and baste with foaming butter for 1 minute until just cooked through.

Spoon a generous arc of warm saffron-fennel puree across each heated plate. Place a seabass fillet skin-side up on top, drizzle vibrant chermoula around the plate, and garnish with delicate fennel fronds.
