2 fresh Branzino fillets (about 150g each), skin-on and descaled
1 small fennel bulb, finely sliced (reserve fronds for garnish)
1/4 teaspoon high-quality saffron threads
1 medium shallot, finely minced
2 garlic cloves, thinly sliced
1/2 cup dry Mediterranean white wine (such as Assyrtiko)
1/2 cup unsalted premium fish stock
2 tablespoons cold unsalted butter, cubed
1 cup heirloom cherry tomatoes, halved
1/4 cup Kalamata olives, pitted and quartered
1 tablespoon capers, rinsed and drained
3 tablespoons ultra-premium extra virgin olive oil, divided
1 tablespoon fresh lemon juice
Flaky sea salt and freshly cracked white pepper to taste

Cooking Instructions

    Pat the branzino fillets thoroughly dry with paper towels. Lightly score the skin in 3 diagonal lines, season both sides with sea salt, and let them rest skin-side up in the refrigerator for 15 minutes to draw out excess moisture.

    For the emulsion: Heat 1 tablespoon of olive oil in a small saucepan over medium heat. Sauté the minced shallot, garlic, and sliced fennel until softened and translucent, about 5 minutes without browning.

    Add the saffron threads to the saucepan, then deglaze with the white wine. Simmer until the wine reduces by half, then pour in the fish stock. Bring to a gentle simmer and cook for 8-10 minutes until the fennel is completely tender.

    Transfer the fennel mixture to a high-speed blender. Blend on high until completely smooth. While blending, drop in the cold cubed butter one piece at a time, along with the lemon juice, to create a glossy, aerated emulsion. Season with white pepper and salt to taste, then pass through a fine-mesh chinois. Keep warm.

    In a separate pan, heat 1 tablespoon of olive oil over medium-high heat. Add the cherry tomatoes, Kalamata olives, and capers. Toss gently for 3 minutes until the tomatoes just begin to blister and soften. Remove from heat and keep warm.

    Heat the remaining 1 tablespoon of olive oil in a heavy-bottomed or cast-iron skillet over high heat until shimmering. Pressing the fish down gently with a spatula to prevent curling, place the branzino fillets skin-side down in the pan. Reduce heat to medium and sear undisturbed for 4 minutes until the skin is incredibly crisp and golden.

    Carefully flip the fillets and sear the flesh side for just 30-45 seconds to finish cooking through. Remove from the pan immediately.

    To plate: Pour a pool of the vibrant yellow saffron-fennel emulsion in the center of two shallow bowls. Arrange the blistered tomato and olive relish on one side. Balance the crispy branzino fillet, skin-side up, over the emulsion. Garnish with fresh fennel fronds and a final whisper of flaky sea salt and olive oil.
