β€’1 medium head cauliflower, broken into small florets
β€’1/2 tsp high-grade Spanish saffron threads

β€’3 tbsp high-fat European unsalted butter, cubed
β€’6 fresh baby artichokes, trimmed and halved
β€’1/3 cup cold-pressed Spanish extra virgin olive oil
β€’1.5 cups ripe cherry tomatoes on the vine
β€’1/4 cup pitted Kalamata olives, finely minced
β€’1 tbsp fresh oregano leaves, finely chopped
β€’1/2 small fennel bulb, shaved paper-thin on a mandoline
β€’1 organic lemon, zested and juiced
β€’Flaky Maldon sea salt and freshly cracked white pepper to taste

Cooking Instructions

    Steep saffron threads in 2 tablespoons of warm water for 10 minutes to bloom the flavor and rich golden color.

    In a heavy-bottomed saucepan, simmer cauliflower florets with heavy cream, bloomed saffron liquid, and a pinch of salt until cauliflower is completely tender (about 12 minutes).

    Transfer cauliflower and liquid to a high-speed blender; blend with 1 tablespoon of butter until velvety smooth. Pass through a fine chinois sieve and keep warm.

    Blanch halved baby artichokes in boiling salted water with half the lemon juice for 4 minutes. Drain and pat thoroughly dry.

    Heat 1 tablespoon olive oil in a cast-iron skillet over medium-high heat. Sear artichoke halves cut-side down until deeply caramelized and golden (3 minutes). Set aside.

    In a small saucepan, gently burst cherry tomatoes in 2 tablespoons olive oil over medium-low heat. Muddle gently, stir in minced olives, oregano, remaining lemon juice, and a pinch of salt. Whisk vigorously to form a glossy, rustic emulsion.

    Lightly score the skin of the bass fillets and season both sides with sea salt and white pepper. Heat remaining olive oil in a heavy stainless steel skillet over high heat until smoking.
