4 large king oyster mushrooms (stems only, cut into 1.5-inch rounds)
400g cauliflower florets
1 cup unsweetened almond milk
1 cup low-sodium vegetable broth
1 tsp high-quality white truffle oil
2 tbsp artisanal vegan butter
1 tbsp olive oil (for searing)
1 generous pinch of saffron threads
2 tbsp fresh yuzu juice (or Meyer lemon juice)
4 tbsp premium extra virgin olive oil
2 garlic cloves, gently crushed
3 sprigs of fresh thyme
1/2 tsp light agave nectar
Flaky sea salt and ground white pepper to taste
1 small handful of microgreens (for garnish)

Cooking Instructions

    Prepare the mushroom 'scallops' by cutting the thick stems of the king oyster mushrooms into 1.5-inch thick rounds. Gently score a shallow crosshatch pattern on both flat sides of each medallion. Set aside.

    In a medium saucepan, combine the cauliflower florets, almond milk, and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes until the cauliflower is completely fork-tender.

    While the cauliflower cooks, prepare the saffron-yuzu emulsion. Bloom the saffron threads in 1 tablespoon of warm water for 5 minutes. In a small bowl, whisk the bloomed saffron (with liquid), yuzu juice, and agave nectar. Slowly drizzle in the extra virgin olive oil while whisking vigorously until emulsified. Season with a pinch of salt.

    Drain the cooked cauliflower, reserving about 1/4 cup of the cooking liquid. Transfer the cauliflower to a high-speed blender. Add the white truffle oil, a pinch of white pepper, salt, and 2 tablespoons of the reserved liquid. Blend on high until completely smooth, glossy, and velvety. Adjust consistency with more liquid if needed. Keep warm.

    Heat 1 tablespoon of olive oil in a heavy cast-iron skillet over medium-high heat. Pat the mushroom scallops dry, season with salt, and place them in the hot skillet. Sear undisturbed for 3-4 minutes until a deep, golden-brown crust forms.

    Flip the mushrooms. Immediately add the vegan butter, crushed garlic cloves, and thyme sprigs to the pan. Tilt the pan slightly and continuously spoon the melted, foaming butter over the mushrooms (basting) for another 3 minutes until tender throughout.

    To serve, spoon a generous pool of the warm truffled cauliflower mousseline onto the center of each plate. Arrange the basted mushroom 'scallops' elegantly on top. Drizzle the vibrant saffron-yuzu emulsion around the plate. Garnish with delicate microgreens and a sprinkle of flaky sea salt.
