6 large dry-pack Hokkaido sea scallops, muscle removed
2 ears sweet corn, kernels shucked (approx. 1.5 cups)
1.5 tbsp sweet white miso paste
3/4 cup prepared ichiban dashi stock
3 tbsp cold unsalted European butter, cubed and divided
15 fresh green shiso leaves
1/2 cup neutral grapeseed oil
3 tbsp Japanese panko breadcrumbs
1 tbsp premium artisanal XO sauce
1 tsp fresh yuzu juice
Flaky Maldon sea salt to taste
Micro red shiso and baby sorrel for garnish

Cooking Instructions

    Prepare the Shiso Oil: Blanch shiso leaves in boiling salted water for 5 seconds, shock immediately in an ice bath, and squeeze completely dry. Blend on high with grapeseed oil for 2 minutes until brilliant green, then strain through a fine cheesecloth without pressing. Set aside.

    Make the XO Pangrattato: In a small pan over medium-low heat, melt 1 tbsp of butter and gently stir in the XO sauce. Add the panko breadcrumbs, toasting continuously until golden brown and intensely fragrant (about 3-4 minutes). Transfer to a paper towel to cool and crisp up.

    Create the Sweet Corn-Miso Velouté: In a saucepan, sweat sweet corn kernels in 1 tbsp butter over low heat for 5 minutes without browning. Add the dashi stock, bring to a simmer, and cook for 6-8 minutes until tender. Transfer to a high-speed blender with white miso, yuzu juice, and the remaining 1 tbsp cold butter. Purée on high until silky and pass through a fine-mesh chinois. Keep warm.

    Sear the Scallops: Thoroughly pat scallops dry and season lightly with fine sea salt. Heat a heavy stainless steel or cast-iron skillet over high heat with 1 tsp grapeseed oil until shimmering. Gently place scallops flat-side down. Sear undisturbed for 90 seconds until a deep golden-brown crust forms. Flip and sear for 30 seconds more, keeping the center translucent and tender.

    Plating: Warm two wide-rimmed shallow bowls. Spoon a pool of the silky Sweet Corn-Miso Velouté into the center of each. Carefully arrange 3 seared scallops atop the velouté. Drizzle drops of vibrant emerald shiso oil into the broth, crown each scallop with a crisp pinch of XO pangrattato, and finish with flaky Maldon salt and micro shiso shoots.
