Transfer the parsnip mixture to a high-powered blender. Add 40g cold butter and black truffle paste. Purée on high speed for 2 minutes until completely smooth. Pass through a fine chinois sieve into a clean pan, adjust salt, cover, and keep warm.

Prepare the Vin Jaune Sauce: In a small copper saucepan, melt 10g butter over medium heat. Add minced shallots and sweat until translucent, about 3 minutes. Deglaze with Vin Jaune and reduce by two-thirds.

Pour in the veal demi-glace and lavender honey. Simmer gently for 8-10 minutes until the sauce coats the back of a spoon with a glossy shine. Strain through a fine-mesh sieve, whisk in 15g cold butter to gloss, and keep warm.

Sauté Mushrooms: Heat 15g butter in a skillet over medium-high heat. Add chanterelles and 2 sprigs of thyme. Sauté for 4-5 minutes until golden brown and tender. Season with Fleur de sel and keep warm.

Cook Duck: Score the duck breast skin in a tight diamond pattern without cutting into the meat. Season both sides generously with sea salt. Place skin-side down in a cold stainless steel pan over low heat.

Slowly render the fat for 10-12 minutes, pouring off excess liquid fat periodically. Once skin is deeply browned and crisp, increase heat to medium-high, flip, and sear the meat side for 2-3 minutes until internal temperature reaches 54°C (130°F) for medium-rare.

Transfer duck to a warm resting rack and let rest for 8 minutes before slicing across the grain into thin, elegant fan slices.
