An elegant French masterpiece featuring perfectly seared, crispy-skinned duck breast accompanied by a luscious, aromatic cherry-lavender gastrique and a velvety smooth parsnip-vanilla purée.

2 magret de canard (duck breasts), skin scored
Kosher salt and freshly cracked black pepper to taste
1 cup fresh sweet cherries, pitted and halved
1/4 cup granulated sugar
1/4 cup red wine vinegar
1/2 cup high-quality duck stock
1/2 tsp dried culinary lavender buds
3 tbsp unsalted butter, divided
300g parsnips, peeled and chopped
1 cup heavy cream
1 cup whole milk
1/2 vanilla bean, split and scraped
Fresh micro-chervil or watercress for garnish

Cooking Instructions

    In a medium saucepan, combine the chopped parsnips, heavy cream, whole milk, and the scraped vanilla bean (both pod and seeds). Bring to a gentle simmer over medium-low heat and cook until the parsnips are completely fork-tender, approximately 20 minutes.

    Remove the vanilla pod from the saucepan. Transfer the parsnips and half of the cooking liquid to a high-powered blender. Add 2 tablespoons of cold butter, then blend on high speed until completely smooth, glossy, and velvety. Adjust consistency with additional cooking liquid if needed, season with sea salt, and pass through a fine-mesh chinois. Keep warm.

    Pat the duck breasts dry with paper towels. Using a very sharp knife, score the skin in a tight crosshatch pattern, being careful not to cut into the flesh. Season both sides generously with kosher salt and freshly cracked black pepper.

    Place the duck breasts skin-side down in a cold, dry skillet. Place over medium-low heat. Slowly cook for 10-12 minutes to render the fat, periodically pouring off the rendered fat, until the skin is deeply golden brown and incredibly crispy. Flip the breasts and sear for another 3-4 minutes for medium-rare (internal temperature of 130°F/54°C). Transfer to a warm board and let rest for 8 minutes.

    Wipe excess fat from the skillet, leaving about 1 teaspoon of residue. Add the sugar and red wine vinegar, stirring over medium heat until the sugar dissolves and begins to caramelize into a light amber. Stir in the halved cherries, duck stock, and lavender buds. Simmer until the sauce reduces to a rich, syrupy glaze (about 6-8 minutes). Remove from heat and whisk in the remaining 1 tablespoon of cold butter to emulsify.

    To serve, slice the rested duck breasts on a bias. Spoon a generous sweep of the warm Parsnip-Vanilla Silk onto each plate. Fan the sliced duck over the purée, spoon the glossy Cherry-Lavender Gastrique and caramelized cherries around the dish, and garnish with fresh micro-chervil.
