2 skin-on Muscovy duck breasts (approx. 200g each)
1 orange habanero pepper, halved and seeded
40 ml fresh yuzu juice
50 g caster sugar
150 ml rich duck stock
1 tbsp Szechuan peppercorns, lightly toasted
1 tsp coarse gochugaru (Korean chili flakes)
60 ml grapeseed oil
200 g parsnips, peeled and diced
30 ml heavy cream
30 g cold unsalted butter, cubed
Flaky sea salt to taste

Cooking Instructions

    Infuse the Szechuan Chili Oil: Heat grapeseed oil, toasted Szechuan peppercorns, and gochugaru in a small saucepan to 110°C (230°F). Remove from heat, steep for 20 minutes, then pass through a fine-mesh sieve and reserve.

    Prepare the Parsnip Silk: Boil diced parsnips in salted water until fork-tender (approx. 12 mins). Drain and blend high-speed with heavy cream and 10g cold butter until satiny. Pass through a chinois for absolute smoothness; keep warm.

    Craft the Charred Habanero-Yuzu Gastrique: Dry-char the habanero halves in a hot cast-iron skillet until skin is blackened in spots. Melt sugar in a saucepan over medium heat to a pale amber caramel. Carefully deglaze with yuzu juice and duck stock. Add charred habanero and simmer gently until reduced by half into a glossy syrup. Remove pepper and monte with remaining 20g cold butter.

    Cook the Duck: Score duck skin in a tight crosshatch pattern, taking care not to pierce the meat. Season thoroughly with sea salt. Place skin-side down in a cold skillet over medium-low heat. Slowly render the fat for 8-10 minutes until golden and thin. Flip and sear for 2-3 minutes until internal temperature hits 54°C (130°F) for medium-rare. Rest on a wire rack for 8 minutes.

    Plating: Swoosh a spoon of hot parsnip puree down center of warm plates. Carve duck breasts against the grain into thick slices and fan over puree. Spoon shiny habanero gastrique over meat and finish with droplets of red Szechuan oil and a sprinkle of flaky salt.
