4 skin-on wild sea bass fillets (approx. 160g each)
2 large fennel bulbs, thinly sliced (reserve fronds for garnish)
0.5g premium Spanish saffron threads
120ml freshly squeezed orange juice
60g high-fat unsalted butter, cubed and cold
50g pitted Kalamata olives
15g all-purpose flour
60ml cold-pressed extra virgin olive oil, divided
80ml filtered water
Maldon flaky sea salt to taste
15g mixed micro chervil and dill fronds for garnish

Cooking Instructions

    Prepare the Charred Fennel Purée: Heat 15ml of extra virgin olive oil in a heavy-bottomed saucepan over high heat. Add sliced fennel and char until caramelized at the edges (approx. 6-8 minutes). Reduce heat, add 50ml water, cover, and simmer until tender. Transfer to a high-speed blender and process until silky. Season with sea salt and pass through a fine sieve. Keep warm.

    Craft the Black Olive Tuile: Blend Kalamata olives, 15g flour, 80ml water, and 15ml extra virgin olive oil in a small food processor until completely smooth. Heat a dry non-stick skillet over medium-high heat. Ladle small spoonfuls of the batter onto the hot pan; it will sizzle and form a spiderweb tuile. Cook until steam stops rising and the tuile is crisp (2-3 minutes). Carefully transfer to paper towels.

    Build the Saffron-Citrus Emulsion: In a small saucepan, bring fresh orange juice and saffron threads to a gentle simmer. Reduce by half until aromatic and golden-red. Reduce heat to low and gradually mount with chilled butter cubes, whisking continuously to form a glossy emulsion. Season with a pinch of fine salt and keep warm over a water bath.

    Pan-Sear the Sea Bass: Score the skin of sea bass fillets lightly in a crosshatch pattern. Pat dry thoroughly with paper towels and season generously with Maldon sea salt. Heat remaining 30ml olive oil in a stainless-steel skillet over high heat until shimmering. Lay sea bass skin-side down, pressing gently with a fish spatula for 10 seconds to ensure skin contact. Cook skin-side down for 4 minutes until golden and hyper-crisp, then flip and kiss the flesh side for 1 minute. Remove from heat.

    Plating: Spoon a smooth swoop of Charred Fennel Purée off-center on four warm, wide-brimmed plates. Set a sea bass fillet atop the purée skin-side up. Spoon the shimmering Saffron-Citrus Emulsion around the dish. Accent with delicate Black Olive Tuiles, reserved fennel fronds, and micro herbs.
