β€’4 large globe artichokes, trimmed down to hearts
β€’1/2 tsp high-grade Spanish saffron threads
β€’45 ml fresh Meyer lemon juice
β€’60 ml fresh blood orange juice
β€’120g cold unsalted cultured butter, cubed
β€’60 ml first-press Greek extra virgin olive oil
β€’50g dehydrated Kalamata olives, finely minced into crumb
β€’30g toasted golden panko breadcrumbs
β€’2 French shallots, finely sliced
β€’60 ml heavy cream (36% fat content)
β€’Fresh lemon thyme sprigs and Fleur de Sel to taste

Cooking Instructions

    Prepare the Artichoke Silk: Sweat sliced shallots in 15g butter over low heat until translucent. Add trimmed artichoke hearts and cover with lightly salted water. Simmer until tender (about 18 minutes). Drain well, transfer to a high-speed blender with heavy cream and 30g cold butter. Blend until ultra-smooth, pass through a fine tamis sieve, and keep warm.

    Craft the Saffron-Citrus Emulsion: In a small copper saucepan, combine blood orange juice, Meyer lemon juice, and saffron threads. Gently reduce by half over medium-low heat. Reduce heat to lowest setting and gradually whisk in 45g of cold cubed butter piece by piece, followed by a slow drizzle of 20ml extra virgin olive oil until glossy and emulsified. Season lightly with Fleur de Sel and hold warm at 55Β°C.

    Make the Olive Soil: Combine finely minced dehydrated Kalamata olives with toasted panko breadcrumbs, a pinch of lemon thyme leaves, and 10ml of extra virgin olive oil. Mix until it resembles rich, fragrant crumble.

    Pan-Roast the Turbot: Pat turbot fillets thoroughly dry with paper towels. Season skin side liberally with fine sea salt. Heat remaining olive oil in a stainless steel skillet over medium-high heat until shimmering. Lay fish skin-side down, gently pressing with a fish spatula for 10 seconds to ensure full contact. Cook for 3-4 minutes until skin is golden and ultra-crisp.

    Finish the Turbot: Flip fillets gently. Add remaining 30g butter and thyme sprigs to the pan. Baste the fish continuously with foaming butter for 1 to 2 minutes until opaque and just tender at the core. Remove to rest on a wire rack.

    Plating: Spoon a generous swoosh of warm Artichoke Silk across warm wide-rimmed plates. Place a crispy turbot fillet central atop the puree. Spoon the glowing Saffron-Citrus Emulsion carefully around the base. Sprinkle the Olive Soil along the side of the fish and garnish with micro lemon thyme.
