Ingredients

4 skin-on wild Mediterranean sea bass fillets (approx. 6 oz each), pin bones removed
2 medium globe eggplants
2 tbsp high-quality sesame tahini
3 tbsp freshly squeezed Meyer lemon juice
1/2 cup cold-pressed Spanish extra virgin olive oil, divided
1 generous pinch premium Spanish saffron threads
1/2 cup clarifyed fish stock (fumet)
2 tbsp heavy cream
1 tsp soy lecithin powder (for stable foam)
1 small fennel bulb, core removed and paper-thinly shaved
2 tbsp white balsamic vinegar
2 tbsp blanched pistachios, toasted and finely chopped
1/4 cup pitted Kalamata olives, finely minced
2 small garlic cloves, microplaned
Fleur de sel and freshly cracked white pepper to taste

Cooking Instructions

    Char the whole eggplants directly over an open gas flame or high-heat grill, turning frequently for 15-20 minutes until completely blackened and collapsed. Scoop out the smoky flesh, discarding the charred skin, and transfer to a high-speed blender.

    Blend the eggplant flesh with tahini, 1 microplaned garlic clove, 1 tbsp Meyer lemon juice, and 3 tbsp extra virgin olive oil until silky smooth. Season with sea salt and pass through a fine chinois strainer. Keep warm.

    Quick-pickle the shaved fennel by tossing it with white balsamic vinegar, 1 tbsp olive oil, a splash of ice water, and a pinch of salt. Set aside to compress for 15 minutes, then drain.

    Combine chopped toasted pistachios, minced Kalamata olives, 1 tbsp extra virgin olive oil, and a touch of lemon zest to create the tapenade garnish.

    Prepare the saffron foam: Gently warm fish stock with saffron threads for 5 minutes to infuse. Stir in heavy cream and soy lecithin powder. Keep at 60°C (140°F). Aerate using an immersion blender held half-submerged to produce a voluminous foam.

    Score the skin of the sea bass fillets lightly in a crosshatch pattern. Pat thoroughly dry with paper towels and season liberally with fine sea salt.

    Heat a heavy stainless-steel skillet over medium-high heat with high-smoke-point oil. Place fish fillets skin-side down, pressing gently with a fish spatula for 10 seconds to prevent curling. Cook skin-side down for 4 minutes until deeply golden and crispy.

    Flip sea bass carefully, add a small knob of cold butter to the pan, baste for 1 minute, and immediately remove from heat.

    Plate by drawing a smooth curve of warm charred eggplant emulsion across shallow warmed bowls. Nestling the crisp sea bass on top, flank with compressed pickled fennel and a delicate spoonful of pistachio-olive tapenade. Spoon aerated saffron foam over the side of the fish and serve immediately.
