•8 red mullet fillets (rouget de roche, scaled, pin-boned, scored)
•4 baby fennel bulbs, trimmed with fronds reserved for garnish
•120 ml premium cold-pressed Ligurian extra virgin olive oil
•0.5 g Spanish Coupe saffron threads, lightly bloomed in warm water
•300 ml clarified rockfish fumet
•60 ml freshly squeezed blood orange juice
•1 tsp Tuscan wild fennel pollen
•1 large organic egg yolk (at room temperature)
•2 garlic cloves, microplaned into a fine purée
•0.5 tsp Piment d'Espelette
•30 g chilled European unsalted butter, cubed
•50 g fresh samphire (sea asparagus), blanched
•Fleur de sel and freshly cracked white pepper to taste

Cooking Instructions

    Halve the baby fennel bulbs lengthwise. Place them cut-side down in a wide sauté pan with 40 ml of olive oil, a splash of fish fumet, a pinch of salt, and the wild fennel pollen. Cover with a parchment cartouche and simmer over very low heat for 20 minutes until tender and caramelized. Keep warm.

    In a heavy copper saucepan, combine the remaining fish fumet, blood orange juice, and bloomed saffron with its soaking liquid. Simmer over medium-high heat until reduced to approximately 80 ml of concentrated, glossy essence.

    Prepare the citrus rouille: In a small mortar or bowl, whisk the egg yolk, microplaned garlic, Piment d'Espelette, a few drops of orange juice, and a pinch of salt. Slowly emulsify with 60 ml of olive oil until thick, silky, and stable. Transfer to a small piping bag.

    Mount the reduced saffron-orange jus: Remove the reduced fumet from direct heat and vigorously whisk in the chilled cubes of butter until emulsified into a silken, glossy sauce. Season precisely with fleur de sel; keep warm (do not boil).

    Lightly brush the skin of the red mullet fillets with the remaining olive oil and season both sides with fleur de sel. Heat a non-stick pan over medium-high heat. Place fillets skin-side down, gently pressing with a culinary spatula for 10 seconds to keep flat. Sear for 2 minutes until the skin is intensely crisp, flip gently, and finish the flesh side off the heat for 30 seconds.

    To plate: Place two pieces of caramelized confit fennel in the center of warmed shallow bowls. Lean two crisp mullet fillets over the fennel. Spoon the warm saffron-orange reduction around the base. Pipe discrete droplets of citrus rouille on the plate, and garnish with blanched samphire and reserved delicate fennel fronds.
