•8 fresh red mullet fillets (rouget de roche), pin-boned and scaled
•2 medium fennel bulbs, trimmed and finely sliced (fronds reserved)
•1 generous pinch premium Spanish saffron threads
•100 ml dry Greek Assyrtiko or Vermentino
•200 ml clarified artisanal fish fumet
•150 ml freshly squeezed blood orange juice
•50 g pitted Kalamata olives, dehydrated and pulsed into fine soil
•60 g chilled unsalted butter, cubed
•45 ml cold-pressed Arbequina extra virgin olive oil
•2 small French shallots, finely minced
•1 garlic clove, microplaned
•20 g fresh sea fennel or rock samphire for garnish
•Fleur de sel and Espelette pepper to taste

Cooking Instructions

    Infuse the saffron in 2 tablespoons of warm fish fumet for 15 minutes to unlock its deep aroma and color.

    In a heavy-bottomed sauté pan, heat 15 ml olive oil over medium-low heat. Sweat the shallots, garlic, and sliced fennel until translucent and tender, without taking on color (approx. 10 minutes).

    Deglaze the fennel with the white wine, reducing by half. Add the remaining fish fumet and the infused saffron. Simmer gently for 8 minutes until fennel is meltingly tender.

    Transfer the fennel mixture to a high-speed blender. Purée until silky smooth, gradually incorporating 40 g of cold cubed butter. Season with fleur de sel and pass through a fine chinois; keep warm in a siphon or bain-marie.

    In a separate small saucepan, reduce the blood orange juice over gentle heat until syrupy and glossy, reaching a nappe consistency. Whisk in 10 ml of olive oil to finish.

    Score the skin of the red mullet fillets with fine, shallow diagonal slashes. Lightly dust the skin with a veil of sea salt and Espelette pepper.

    Heat the remaining olive oil in a non-stick skillet over medium-high heat until shimmering. Place the fillets skin-side down, gently pressing with a fish spatula for 10 seconds to prevent curling.

    Cook skin-side down for 2 to 3 minutes until shatteringly crisp and golden. Flip the fish, add the remaining 20 g butter to the pan, baste for 30 seconds, and immediately transfer to a warm rest plate.

    To plate: Spoon a vibrant pool of warm saffron-fennel emulsion in the center of shallow heated bowls. Arrange two crisped fillets atop the emulsion. Drizzle blood orange reduction along the periphery, scatter the Kalamata olive soil, and finish with blanched sea fennel and delicate fennel fronds.
