4 skin-on Loup de Mer fillets (approx. 6 oz each), scaled and pin-boned
2 large fennel bulbs, thinly sliced (fronds reserved for garnish)
1/2 tsp high-grade Spanish saffron threads
60 ml dry Mediterranean white wine (e.g., Assyrtiko)
120 ml heavy cream
4 fresh Black Mission figs, halved
80g Kalamata olives, pitted and finely diced
1 tbsp Nonpareille capers, drained and rinsed
2 tbsp pine nuts, toasted
1 tbsp aged Sherry vinegar
150 ml cold-pressed extra virgin olive oil, divided
1 tbsp artisanal za'atar spice blend
30 ml fresh blood orange juice
1 large organic egg yolk
2 tbsp fresh pomegranate seeds for finishing
Flaky sea salt (Maldon) and freshly ground white pepper to taste

Cooking Instructions

    Steep saffron threads in warm white wine for 10 minutes until deeply aromatic and golden orange.

    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add sliced fennel and a pinch of salt. Cook gently until softened without browning (approx. 10 minutes). Pour in the saffron wine mixture and reduce by half. Add heavy cream, simmer for 5 minutes, then transfer to a high-speed blender. Process until glass-smooth and pass through a fine chinois. Adjust seasoning with white pepper and keep warm.

    Heat a dry cast-iron skillet over high heat. Place fig halves cut-side down and sear for 2 minutes until deeply charred. Remove and chop half of the charred figs into small pieces. Reserve remaining halves for plating.

    In a small bowl, combine chopped charred figs, diced Kalamata olives, capers, toasted pine nuts, sherry vinegar, and 2 tablespoons of olive oil to form the tapenade. Season lightly with sea salt.

    Prepare the citrus emulsion: Place the egg yolk, blood orange juice, and za'atar in a heatproof glass bowl set over simmering water (ba科学-marie). Whisk vigorously while slowly trickling in 80ml of extra virgin olive oil until a light, velvety emulsion forms. Season with a pinch of sea salt and hold in a warm spot.

    Lightly score the skin side of the Loup de Mer fillets with three thin diagonal slits. Pat skin thoroughly dry with paper towels and season both sides with sea salt.

    Heat 2 tablespoons of olive oil in a heavy stainless steel or cast-iron skillet over medium-high heat. Place fish fillets skin-side down, applying gentle pressure with a spatula for 30 seconds to prevent curling. Cook for 4 minutes until skin is ultra-crisp and golden brown. Flip and cook for an additional 60 seconds. Remove from heat.

    To plate: Spoon a smooth swoop of warm Saffron Fennel Puree onto the center of each pre-warmed plate. Place a crispy Loup de Mer fillet off-center atop the puree. Crown the fish with a neat spoonful of Charred Fig Tapenade and garnish with a charred fig half. Drizzle the Citrus Za'atar Emulsion around the plate perimeter. Finish with reserved fennel fronds and pomegranate seeds.
