4 whole duck breasts (approx. 200g each), scored
1 tbsp Sichuan peppercorns, toasted and coarsely ground
1/2 tsp Chinese five-spice powder
1 tsp flaky sea salt
1 habanero pepper, halved and seeded
1.5 cups fresh blackberries
1 medium shallot, finely minced
1/4 cup high-quality red wine vinegar
3 tbsp wildflower honey
500g parsnips, peeled and roughly chopped
50g chilled unsalted butter, cubed
1 tbsp fresh yuzu juice
1/4 cup heavy cream
1/4 cup fresh micro cilantro for garnish

Cooking Instructions

    Score the skin of each duck breast in a fine crosshatch pattern, taking care not to cut into the meat. Mix the ground Sichuan peppercorns, five-spice powder, and sea salt, then rub evenly over both sides of the duck. Allow to rest at room temperature for 15 minutes.

    Prepare the gastrique: Blister the habanero halves in a dry skillet over high heat until lightly charred. In a small heavy-bottomed saucepan over medium heat, melt the honey until it bubbles and darkens slightly to a light amber hue (about 2 minutes).

    Deglaze the caramelizing honey with red wine vinegar. Add minced shallots, fresh blackberries, and the charred habanero. Simmer gently over medium-low heat for 12-15 minutes until the blackberries break down completely. Pass through a fine-mesh sieve, pressing to extract liquid, discard solids, and keep gastrique warm.

    Make the purée: Boil chopped parsnips in salted water for 12 minutes until tender. Drain thoroughly and transfer immediately to a high-speed blender with cold butter cubes, heavy cream, and yuzu juice. Purée on high until silky smooth. Season to taste and keep warm.

    Place the duck breasts skin-side down in a cold cast-iron skillet. Set heat to medium-low to render fat gradually, cooking skin-side down for 10-12 minutes until the skin becomes deep golden and ultra-crispy.

    Flip the duck breasts and cook on the flesh side for 2-4 minutes, or until the internal temperature reaches 132°F (55°C) for medium-rare. Remove from heat and rest on a cutting board for 8 minutes.

    To serve: Swoosh a generous spoon of warm yuzu-parsnip purée onto each plate. Carve each duck breast diagonally into thin slices and fan over the purée. Drizzle with the hot habanero-blackberry gastrique and garnish with fresh micro cilantro.
