Drain excess liquid, reserve 2 tablespoons, and transfer parsnips to a high-speed blender. Blend with 30g cold butter until ultra-smooth and velvety. Season with salt and keep warm.

Season the duck: Rub the scored duck skin generously with Maldon sea salt and ground Szechuan peppercorns, pressing gently into the cuts.

Sear the duck: Place duck breasts skin-side down in a cold cast-iron skillet. Turn heat to medium-low to render duck fat slowly for 10-12 minutes until skin is deeply golden and crackling crisp. Flip duck and cook for 2-3 minutes for medium-rare (internal temp 54°C / 130°F).
