Ingredients

2 plump duck breasts, skin scored in a fine diamond pattern
1 tbsp Szechuan peppercorns, toasted and finely ground
2 red bird's eye chilies, thinly sliced
100g fresh kumquats, thinly sliced and seeded
3 tbsp wildflower honey
60ml unfiltered rice vinegar
150ml rich duck stock (or dark veal stock)
300g parsnips, peeled and chopped into 1cm rounds
50g unsalted cold butter, divided
50ml heavy cream
1 tbsp high-grade artisanal chili oil
1 small handful micro coriander for garnish
Flaky Maldon sea salt to taste

Cooking Instructions

    Prepare the Parsnip Silk: Simmer parsnips in lightly salted water with the heavy cream for 15 minutes until fork-tender. Drain excess liquid, reserve 2 tablespoons, and transfer parsnips to a high-speed blender. Blend with 30g cold butter until ultra-smooth and velvety. Season with salt and keep warm.

    Season the duck: Rub the scored duck skin generously with Maldon sea salt and ground Szechuan peppercorns, pressing gently into the cuts.

    Sear the duck: Place duck breasts skin-side down in a cold cast-iron skillet. Turn heat to medium-low to render duck fat slowly for 10-12 minutes until skin is deeply golden and crackling crisp. Flip duck and cook for 2-3 minutes for medium-rare (internal temp 54°C / 130°F).

    Rest the meat: Remove duck from skillet and let rest on a warm cutting board for 8 minutes before slicing.

    Create the Spicy Gastrique: Pour off all but 1 tablespoon of duck fat from the skillet. Place over medium heat, add sliced kumquats and bird's eye chilies, sauteing for 1 minute. Stir in honey and let it caramelize lightly for 2 minutes.

    Finish sauce: Deglaze pan with rice vinegar, reducing until syrupy. Pour in duck stock and simmer for 3-4 minutes until rich and glossy. Remove from heat and mount sauce by whisking in remaining 20g cold butter.

    Plating: Spread a graceful swoop of Parsnip Silk across warm plates. Thinly slice duck breast against the grain and fan along purée. Spoon spicy kumquat gastrique over duck, dot with artisanal chili oil, and crown with micro coriander.
