An elevated Mediterranean composition featuring pan-crisped turbot fillets resting on a silky braised baby artichoke barigoule, bathed in a vibrant saffron-infused citrus nage and finished with delicate dehydrated olive tuiles.
Prepare the olive crisp: Finely chop the Taggiasca olives and spread them thinly over a silicone baking mat. Dehydrate at 95Β°C (200Β°F) for 40 minutes until completely crisp, then gently crush into coarse tuile shards.
Confit the artichokes: In a small heavy saucepan, submerge the turned baby artichokes and sliced fennel in 40 ml of olive oil with half the minced shallots. Cook gently over low heat for 18β20 minutes until tender; season with Fleur de Sel and keep warm.
Create the saffron-citrus nage: In a sauteuse, sweat the remaining shallots in 10 g of butter. Deglaze with dry white wine and reduce by half. Add the fish fumet, Meyer lemon juice, and saffron threads. Simmer gently for 8 minutes to infuse, then vigorously whisk in 60 g of cold cubed butter over very low heat until emulsified and glossy. Season with a pinch of Espelette pepper.
Cook the fish: Score the turbot skin lightly in a diamond pattern and dry thoroughly. Heat 20 ml of olive oil in a non-stick pan over medium-high heat. Place the fillets skin-side down, gently pressing with a fish spatula for the first 30 seconds to ensure even contact. Cook for 4 minutes until the skin is golden and shatteringly crisp.
Finish the fish: Flip the fillets, add the remaining 20 g of butter, and baste continuously for 1 minute until the flesh is just opaque and pearlescent. Remove from heat immediately.
Assemble and plate: Pool the golden saffron-citrus nage into the base of four shallow warm ceramic bowls. Arrange the confit artichokes and shaved braised fennel in the center. Carefully rest a turbot fillet skin-side up on top. Garnish with dehydrated Taggiasca olive shards and fresh fennel fronds.
