Ingredients

•4 skin-on Mediterranean sea bass (Loup de Mer) fillets (approx. 160g each), scaled and pin-boned
•2 baby fennel bulbs, trimmed, fronds reserved for garnish, quartered lengthwise
•12 heirloom cherry tomatoes, scored and peeled
•250 ml clarified fish fumet
•60 ml dry white wine (such as Vermentino)
•15 ml Pernod or pastis
•1 generous pinch premium Greek or Spanish saffron threads
•80 g cold unsalted cultured butter, diced
•60 ml cold-pressed extra-virgin olive oil, divided
•1 medium shallot, brunoise
•2 garlic cloves, lightly crushed
•40 g Niçoise olives, pitted, rinsed, and dehydrated or finely minced
•1 Meyer lemon, zested and juiced
•3 sprigs fresh thyme
•Fleur de sel to taste
•Freshly ground white pepper to taste

Cooking Instructions

    Steep the saffron threads in 30 ml of hot fish fumet for 15 minutes to fully bloom the aromatics and color.

    In a shallow cocotte, heat 20 ml of olive oil over medium-low heat. Add the crushed garlic, 1 thyme sprig, and fennel quarters. Sauté for 3 minutes until lightly golden. Add the remaining fish fumet, cover with a parchment cartouche, and gently braise for 15 minutes until tender.

    Add the peeled cherry tomatoes to the braising fennel for the final 5 minutes of cooking, poaching them gently until soft but holding their shape. Transfer vegetables to a warm holding plate, reserving the cooking liquid.

    For the emulsion: In a small saucepan, sweat the brunoise shallot in 10 ml olive oil until translucent. Deglaze with white wine and Pernod, reducing by half. Add the saffron infusion and remaining strained braising liquid. Reduce to approximately 60 ml, then vigorously whisk in the cold cultured butter piece by piece off the heat to form an emulsion. Season with Meyer lemon juice, white pepper, and salt. Strain through a fine chinois.

    Lightly score the sea bass skin in fine diagonal lines at 5mm intervals. Pat the fillets thoroughly dry with paper towels and season with fine sea salt.

    Heat 30 ml olive oil in a heavy stainless-steel skillet over high heat until shimmering. Place the fillets skin-side down, gently pressing with a fish spatula for 20 seconds to prevent curling. Lower heat to medium-high and sear undisturbed for 4 minutes until the skin is blistered and ultra-crisp.

    Flip the fish, remove pan from heat immediately, and allow the residual pan heat to finish cooking the flesh gently for 60 to 90 seconds.

    To plate: Spoon a generous circle of the vibrant yellow saffron-anise emulsion into warm shallow bowls. Arrange the braised fennel and confit tomatoes centrally. Perch a sea bass fillet skin-side up over the vegetables. Garnish with minced Niçoise olives, Meyer lemon zest, and delicate fennel fronds. Finish with a touch of fleur de sel.
