150g all-purpose flour
100g cold unsalted butter, cubed
50g powdered sugar
30g unsalted pistachios, finely ground
1 large egg yolk
A pinch of fine sea salt
150g mild, creamy fresh goat cheese
120ml heavy whipping cream, chilled
45ml high-quality lavender honey
1 tsp Madagascar vanilla bean paste
8 fresh Black Mission figs, halved
60ml smoked honey (or honey infused with a drop of liquid smoke)
1 sprig fresh rosemary
Maldon flaky sea salt for garnish
12 micro-basil leaves for garnish
20g toasted pistachios, roughly chopped

Cooking Instructions

    To make the pastry, pulse the flour, cold cubed butter, powdered sugar, ground pistachios, and a pinch of salt in a food processor until it resembles wet sand. Add the egg yolk and pulse just until the dough starts to clump together. Gather into a disc, wrap in plastic, and chill for 30 minutes.

    Preheat your oven to 175°C (350°F). Roll out the chilled dough on a lightly floured surface to a 3mm thickness. Cut and fit the dough into four 4-inch loose-bottomed tartlet tins. Prick the bases with a fork, line with parchment paper, fill with pie weights, and blind bake for 15 minutes. Remove weights and bake for an additional 5 minutes until golden and crisp. Let cool completely.

    Prepare the mousse by whipping the heavy cream to medium-stiff peaks in a chilled bowl. In a separate bowl, vigorously whisk the goat cheese, lavender honey, and vanilla bean paste together until perfectly smooth and aerated. Gently fold the whipped cream into the goat cheese mixture in three stages to maintain volume. Transfer to a piping bag fitted with a round nozzle and chill for at least 20 minutes.

    For the charred figs, heat a dry cast-iron skillet over high heat. Brush the cut side of the halved figs with a tiny amount of smoked honey. Place them cut-side down in the hot skillet and sear for 1-2 minutes until deeply caramelized and slightly charred. Remove immediately from the pan and let rest.

    Gently warm the remaining smoked honey in a small saucepan with the rosemary sprig over low heat for 5 minutes to infuse. Remove the rosemary sprig and set the warm glaze aside.

    To assemble, pipe a generous, smooth layer of the goat cheese mousse into the base of each cooled pastry shell. Arrange four charred fig halves elegantly on top of the mousse, pressing down slightly.

    Drizzle the warm rosemary-infused smoked honey glaze over the figs. Garnish with chopped toasted pistachios, micro-basil leaves, and a delicate sprinkle of flaky sea salt. Serve immediately at room temperature.
