240 ml heavy whipping cream
2 tbsp high-quality culinary dried chamomile flowers
80 ml raw wildflower honey
3 large organic egg yolks
50 g superfine almond flour
30 g unsalted butter, cold and cubed
25 g demerara sugar
1 pinch fleur de sel
150 g unsweetened apricot puree
30 ml fresh yuzu juice (or sub key lime)
1.5 g agar-agar powder
1 tsp organic bee pollen, for garnish
40 g fresh honeycomb, cut into small cubes for garnish

Cooking Instructions

    In a small saucepan, bring the heavy cream and dried chamomile flowers to a gentle simmer. Remove from heat, cover, and let steep for 20 minutes. Strain through a fine-mesh sieve, pressing to extract all liquid. Chill the infused cream completely in the refrigerator.

    Preheat the oven to 170°C (340°F). Combine the almond flour, demerara sugar, and a pinch of fleur de sel. Rub the cold cubed butter into the dry mixture using your fingertips until it forms coarse, sandy crumbs. Spread onto a baking sheet lined with parchment paper and bake for 12-14 minutes until golden brown and fragrant. Let cool completely.

    To make the fluid gel, combine the apricot puree, yuzu juice, and agar-agar in a saucepan. Whisk vigorously and bring to a boil. Boil for 1 minute while whisking continuously. Pour the mixture into a shallow container and refrigerate until completely set into a firm sheet (about 30 minutes).

    Break the set apricot-yuzu gel into pieces, transfer to a high-speed blender, and blend on high until a perfectly smooth, glossy fluid gel forms. Transfer to a piping bag fitted with a small round tip and store in the fridge.

    Prepare a bain-marie (double boiler). In a heatproof bowl set over simmering water, whisk the egg yolks and wildflower honey continuously until the mixture becomes pale, thick, and reaches 71°C (160°F) (about 5-6 minutes). Remove from heat and whip with an electric mixer until cooled to room temperature and tripled in volume.

    Whip the chilled chamomile-infused cream to medium peaks. Gently fold the whipped cream into the cooled honey-egg yolk mixture in three additions, maintaining as much volume as possible. Pour the mixture into silicone half-sphere molds and freeze for at least 4 hours, or overnight, until firm.

    To plate: Demold the chamomile semifreddo domes 5 minutes before serving. Scatter a neat line of the almond streusel across each plate. Place a semifreddo dome offset on top of the streusel. Pipe elegant dots of the apricot-yuzu gel around the plate. Garnish with a cube of fresh honeycomb, a sprinkle of bee pollen, and edible micro-flowers if desired.
