To make the Bay Leaf Ice Cream: In a saucepan, bring 250ml milk, 150ml heavy cream, and fresh bay leaves to a simmer. Turn off heat, cover, and steep for 30 minutes. Whisk egg yolks with 70g sugar until pale. Strain cream mixture, reheat, and slowly temper into egg yolks. Return to heat and cook until 82°C (180°F) to coat the back of a spoon. Strain, chill completely, and churn in an ice cream maker.

To prepare the Cardamom Delice: Heat remaining 300ml heavy cream with crushed cardamom pods until simmering. Cover and steep for 20 minutes. Strain cream over the chopped dark chocolate, let sit for 2 minutes, then gently emulsify with a spatula until glossy. Pour mixture into ring molds lined with acetate strips and chill in the refrigerator for at least 4 hours to set.

To make the Smoked Honey Gel: Cold-smoke the wildflower honey using a smoking gun with applewood chips for 10 minutes (or use high-quality smoked honey). Combine smoked honey, 50ml water, and agar agar in a small pan. Bring to a boil for 1 minute while whisking continuously. Pour onto a tray to set, then transfer set gel to a high-speed blender and process until completely smooth and fluid. Transfer to a squeeze bottle.

To prepare the Caramelized Figs: Just before serving, melt butter and remaining 50g sugar in a skillet over medium-high heat. Place fig halves cut-side down and sear for 2 minutes until deeply caramelized and warmed through.

Assembly: Unmold the chocolate delice onto the center of each plate. Arrange warm caramelized figs alongside. Pipe dots of smoked honey gel around the plate. Add crushed toasted hazelnuts for texture, and finish with a smooth quenelle of bay leaf ice cream next to the delice.
