β€’1 lb elbow macaroni
β€’2 cups butternut squash, cubed
β€’1 cup cauliflower florets
β€’3 tbsp unsalted butter
β€’1 cup whole milk
β€’2 cups sharp cheddar cheese, shredded
β€’4 oz cream cheese
β€’1 tsp garlic powder
β€’1 tsp onion powder
β€’1 tsp salt
β€’1/2 tsp black pepper
β€’1/4 tsp smoked paprika

Cooking Instructions

    Bring a large pot of salted water to boil. Add butternut squash and cauliflower, cook for 12 minutes until very tender. Remove vegetables with a slotted spoon and set aside.

    In the same pot, cook macaroni according to package directions until al dente. Drain and set aside.

    Add cooked squash, cauliflower, milk, butter, cream cheese, garlic powder, onion powder, salt, pepper, and paprika to a blender. Blend on high until completely smooth and creamy, about 2 minutes.

    Pour the veggie sauce back into the pot over low heat. Stir in shredded cheddar cheese until melted and silky smooth.

    Add cooked macaroni to the cheese sauce and toss until every piece is coated. Adjust seasoning to taste.

    Serve immediately topped with extra shredded cheese or breadcrumbs if desired. The vegetables are completely hidden in the golden, creamy sauce!
