Sugar Cookie Bars

Pan-crisped line-caught Mediterranean sea bass presented over a velvety brown-butter cauliflower mousseline, accompanied by tender confit baby leeks and an exquisite Champagne beurre blanc finished with French caviar.
Prepare the Mousseline: In a small saucepan, brown 50g of the butter until fragrant and hazelnut-toned (beurre noisette), then strain immediately. Simmer the cauliflower in salted water until fork-tender; drain thoroughly. Transfer to a high-speed blender, emulsify with the beurre noisette and warm heavy cream until completely silk-like. Pass through a fine tamis sieve, season with fleur de sel, and keep warm.
Confit the Leeks: In a small skillet, place the baby leeks with 30g butter, a splash of mineral water, and a pinch of salt. Cover with a parchment cartouche and gently braise over low heat for 12–15 minutes until glazed, sweet, and yielding. Keep warm.
Build the Beurre Blanc Reduction: In a heavy copper saucier, combine the minced shallots, Champagne, and white wine vinegar. Simmer over medium-low heat until reduced to approximately 1.5 tablespoons of glossy liquid (glace).
Emulsify the Sauce: Reduce heat to the absolute lowest setting. Whisk in the remaining 170g of cold cubed butter, one small cube at a time, maintaining an opaque, velvety emulsion. Season carefully with white pepper. Pass through a chinois into a warm thermos. Gently fold in the caviar right before plating to avoid crushing the pearls.
Sear the Sea Bass: Lightly score the skin of the fillets with a razor-sharp knife at 2mm intervals to prevent curling. Thoroughly pat skin completely dry and dust with fine sea salt. Heat grapeseed oil in a stainless steel skillet over medium-high heat until faintly smoking. Press the fillets skin-side down with a fish spatula for 45 seconds to ensure pristine, flat contact. Sear until the skin is golden and shatteringly crisp, about 3 to 4 minutes. Flip, turn off the flame, and let residual heat finish the fish for 60 seconds.
Assemble and Plate: Pipe or spoon a smooth teardrop of cauliflower mousseline on pre-warmed porcelain plates. Arrange two confit baby leeks alongside. Rest the sea bass fillet slightly over the leeks with crisp skin facing upwards. Nappe the glossy caviar beurre blanc around the base and crown with fresh chervil sprigs. Serve immediately.

The Caprese Salad Skewers recipe was a triumph! I prepared them for a party's barbecue and everyone loved them. The basil was so aromatic, the mozzarella so fresh, and the skewers were the perfect size and an appropriate.
