In a heavy-bottomed Dutch oven, sear the seasoned veal cheek until deeply caramelized on all sides. Deglaze with Barolo wine, reduce by half, then submerge in 200ml of veal stock. Cover and braise at 150°C (300°F) for 2.5 hours until fork-tender.

Shred the cooked veal cheek finely and blend lightly with smoked ricotta, 50g of Parmigiano-Reggiano, and a tablespoon of braising reduction until a silky filling forms. Transfer to a pastry bag and chill.

Make pasta dough: mound Tipo 00 flour, form a well, and add egg yolks and whole egg. Incorporate flour gradually, knead for 10 minutes until smooth and elastic, wrap tightly in plastic wrap, and rest at room temperature for 30 minutes.
