1 small sourdough baguette, sliced into 1/2-inch rounds
8 fresh Black Mission figs, halved lengthwise
1 tablespoon white miso paste
2 tablespoons Grade A maple syrup
150g fresh goat cheese (Chèvre)
2 tablespoons heavy cream
1 teaspoon freshly grated lemon zest
20g toasted pistachios, finely crushed
A handful of micro-basil or micro-mint for garnish
A pinch of Maldon flaky sea salt

Cooking Instructions

    In a small chilled bowl, whisk together the goat cheese, heavy cream, and lemon zest until the mixture is light, airy, and spreadable.

    In a separate ramekin, whisk the white miso and maple syrup together until completely smooth to create the glaze.

    Lightly brush the sourdough slices with olive oil and toast in a pan or under a broiler until golden brown and crisp.

    Place a non-stick skillet over medium-high heat. Place the figs cut-side down and sear for 60 seconds until the sugars begin to caramelize.

    Drizzle the miso-maple glaze over the figs in the pan, allowing it to bubble and coat the fruit for 30 seconds, then remove from heat immediately.

    Assemble by spreading a generous quenelle of the whipped goat cheese onto each warm crostini.

    Top with two glazed fig halves, a dusting of crushed pistachios, a pinch of Maldon salt, and a few leaves of micro-basil.
