4 pieces salmon fillets (6 oz each)
2 tablespoons olive oil
2 tablespoons butter
4 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1/2 cup sun-dried tomatoes, chopped
3 cups fresh spinach
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)

Cooking Instructions

    Pat salmon fillets dry and season both sides generously with salt, pepper, and Italian seasoning.

    Heat olive oil in a large skillet over medium-high heat. Sear salmon skin-side up for 4-5 minutes until golden, flip and cook 3 minutes more. Remove and set aside.

    In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

    Pour in chicken broth and heavy cream, stirring to combine. Add sun-dried tomatoes and bring to a gentle simmer.

    Stir in Parmesan cheese until melted and sauce is creamy. Add red pepper flakes if using.

    Return salmon to the skillet, spooning sauce over the top. Simmer for 2-3 minutes until salmon is cooked through and sauce thickens.
