1 lb Italian sausage
1 medium yellow onion, diced
4 cloves garlic, minced
3 tbsp tomato paste
28 oz crushed tomatoes
4 cups chicken broth
2 tsp Italian seasoning
8 sheets lasagna noodles, broken
1 cup ricotta cheese
1.5 cups mozzarella cheese, shredded
0.5 cup Parmesan cheese, grated
0.25 cup fresh basil
salt and pepper to taste

Cooking Instructions

    In a large Dutch oven or deep skillet over medium-high heat, cook Italian sausage until browned, breaking it into crumbles. Remove excess fat if needed.

    Add diced onion to the pan and sauté for 3-4 minutes until softened. Stir in minced garlic and cook for 1 minute until fragrant.

    Add tomato paste and cook for 2 minutes, stirring constantly to caramelize and develop deep flavor.

    Pour in crushed tomatoes, chicken broth, and Italian seasoning. Season with salt and pepper. Bring to a vigorous boil.

    Break lasagna noodles into 2-inch pieces and add to the boiling soup. Cook for 10-12 minutes, stirring occasionally, until noodles are al dente.

    Reduce heat to low. In a bowl, mix ricotta with half the mozzarella and half the Parmesan.

    Ladle soup into bowls and top each with a generous dollop of the cheese mixture. Sprinkle remaining mozzarella and Parmesan on top.

    Garnish with fresh torn basil leaves and serve immediately while the cheese is melty and glorious.
