200g Valrhona Opalys White Chocolate, finely chopped
150ml Heavy Cream (35% fat)
2 drops food-grade Eucalyptus Essence
200g Fresh Blackberries
50g Granulated Sugar
10ml Fresh Lemon Juice
3 Large Egg Whites, room temperature
150g Icing Sugar, sifted
5g Food-grade Activated Charcoal Powder
A pinch of Sea Salt

Cooking Instructions

    Prepare Charcoal Meringues: Whisk egg whites to soft peaks, then gradually fold in icing sugar and charcoal powder until stiff and glossy. Pipe thin shards onto a lined tray and bake at 90°C (195°F) for 90 minutes until crisp.

    Create Blackberry Silk: Combine blackberries, granulated sugar, and lemon juice in a small saucepan. Simmer for 10 minutes over medium heat, then blend and pass through a chinois (fine-mesh sieve) to remove seeds.

    Infuse Ganache: Scald the heavy cream in a pan until it just reaches a simmer. Remove from heat, stir in the eucalyptus essence, and pour directly over the white chocolate. Let sit for 2 minutes, then emulsify with an immersion blender until silky.

    Smoke and Chill: Pour the ganache into a shallow bowl. Use a smoking gun with applewood chips to trap smoke over the ganache for 30 seconds. Cover tightly and refrigerate for at least 2 hours to set.

    Plating: Spoon a vibrant pool of blackberry silk onto the center of a chilled slate-colored plate. Carefully place a hot-spoon quenelle of the smoked ganache in the center.

    Final Garnish: Artfully bridge the ganache with charcoal meringue shards. Finish with a few halved fresh blackberries and a tiny pinch of sea salt to elevate the botanical notes.
