Ingredients

1 bell pepper, chopped
½ cup cherry tomatoes, chopped
1 clove garlic, minced
juice of a lemon
¼ cup kalamata olives, chopped
1 tbsp olive oil
1 cup uncooked whole-wheat orzo
Pepper to taste
¼ red onion, finely chopped
¼ tsp salt
1 cup spinach, chopped
